6 T olive oil

2 T red onion, minced

2 T garlic, minced

1 ¼ lb chicken breast, sliced

1 ½ t serrano chile, minced

1 c onions, sliced

½ c red bell pepper, diced

½ c tomatoes, diced

1 T Thai fish sauce

1 T Thai sweet bean sauce

1 ½ t Maggi sauce (optional)

½ c lemon grass/chicken stock

3 T mint leaves, chopped

Mint sprigs for garnish



Heat oil in a skillet over high heat. Add red onions and garlic and sauté until golden, about 1 ½ minute. Add chicken and chile and stir fry 2 minutes. Add all remaining ingredients except mint sprigs and cook three minutes. Transfer to a plate and serve. Garnish with mint sprigs.
