Serves 4

2 large Dungeness crabs, cooked, cleaned & cracked

¼ c catsup

2 T garlic-chile paste

2 T oyster sauce

2 T good quality soy sauce

1 T tamarind paste

¼ c water

3 T peanut oil

4 scallions, thinly sliced

1 T ginger, minced

4 garlic cloves, minced

1 hot chile, minced

2 T cilantro, minced, plus more for garnish



Mix catsup, garlic-chile, oyster sauce, soy, tamarind and water in a bowl. Heat peanut oil in a wok or large sauté pan. Sauté scallions, ginger, garlic and chile until translucent. Add crab and sauce and cook until warmed through. Sprinkle with cilantro and serve with Amberhill Secret White Blend.
