Believe it or not, St Patrick’s Day is right around the corner! For those who are ready to trade in your days of drinking heavy beer, for a lighter more refreshing beverage, we have a cocktail just for you! So dust off your old “Kiss Me I’m Irish” t-shirt, throw on some green beads and get to making your new favorite cocktail that will have you singing in a perfect Irish accent in no time!


The Irish Amber Mojito

8 mint leaves destemmed
Juice of one fresh lime, quartered
¾ oz. simple syrup (recipe below)
1 oz. white rum
1 oz. Amberhill Secret White
1/2 oz. soda water
Garnish: mint sprigs and a cucumber slice
In the bottom of a pint glass, muddle mint leaves and lime wedges. Fill glass with ice and add rum and simple syrup. Splash Amberhill Secret White on top and garnish with mint. Makes 1 drink.
Simple Syrup

To make simple  syrup, combine equal parts sugar and water in a medium sauce pan. Bring to a boil. Lower heat and simmer for 2 minutes. Let cool before adding to the cocktail mixture.
